Mom’s Zucchini Bread

So my mom, Enid, isn’t what you would call a world class chef, but she has her moments. One of my favorites is her zucchini bread. Ahhhh. First of all, how can bread made from zucchini be tasty, you ask? Well, not unlike carrot cake, if you put enough sugar and butter in it, it will start to taste yummy. My mom would generally make about a ton of these little loaves in the fall, knowing that her son would be devouring them for the rest of the year. She would even hide a couple loaves in the back of the freezer, and take them out on Christmas morning for a little extra surprise gift. Oh, mom. Love you.
